Genius 15-minute pizza

A quick and easy pizza recipe that you can make in around 15 minutes. Embellish the dough with tomatoes, mozzarella and fresh basil, or your favourite toppings.

Ingredients

  • 200 g (1¾ cups) spelt flour
  • 2 tsp baking powder
  • pinch of sea salt
  • 125 ml (½ cup) warm water
  • 1 tbsp extra-virgin olive oil
  • 1 tbsp pure maple syrup or raw honey
  • semolina or rice flour, for dusting
Topping
  • 3 generous tbsp passata
  • 1 tbsp grated parmesan
  • 1 ball buffalo mozzarella
  • extra-virgin olive oil, to drizzle
  • 6 basil leaves, to garnish

Instructions

  1. Preheat your oven to 250°c fan-forced (or the non-fan-forced equivalent).
  2. Combine spelt flour, baking powder and salt in a mixing bowl. Pour in the warm water, olive oil and maple syrup and start mixing immediately until combined and you have a soft, sticky dough. Dust with a little extra flour if required.
  3. Roll and stretch the dough into a round circle about the size of the over-proof frying pan you will use to cook your pizza. Sprinkle the base of your frying pan with a little semolina or rice flour to prevent any sticking. Carefully place the dough in the frying pan.
  4. Spread a spoonful or two of passata over the top of the dough followed by a little grated parmesan. Arrange over fresh mozzarella then caress the top with a little drizzle of olive oil.
  5. Cook the pizza on the stove over medium heat for 3 minutes or until the bottom is golden and the top starts to puff up.
  6. Place the pan in the oven and cook for another 6–8 minutes or until the cheese has melted and the top is crisp and golden brown. Serve immediately garnished with fresh basil.
Note
Add your favourite toppings – olives, sliced mushroom and roasted capsicum are great.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
