Ingredients

  • plain flour
  • salt
  • 2 eggs
  • 10 tbsp white sugar
  • 7 tbsp honey
  • 4 tbsp oil (olive or vegetable)
  • 2 tsp bicarbonate soda
  • icing sugar, for decoration

Instructions

Preheat oven to 175°C.

Beat eggs in a bowl. Add all other ingredients except flour and icing sugar and mix.

Then slowly add the sifted flour bit by bit. The mixture will be quite sticky. Flour hands so that small pieces of the mixture can be rolled into balls (there should be about 24 pieces) and press down with hands to flatten.

Place onto a baking tray that has been greased lightly and bake in oven for 15 minutes.

When ready take out of oven allow to sit for 5–10 minutes and sprinkle icing sugar on the top.

NoteYou can add extra spices to the icing sugar for added flavour if desired, e.g. mixed spice, ginger spice or cinnamon spice.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
