Steamed barramundi with ginger

In this quick and easy recipe, whole fish is cooked in a microwave. It can also be cooked in a steamer on the stove.

Ingredients

  • 1whole barramundi, cleaned
  • 6 spring onions
  • grated fresh ginger
  • 3 tbsp soy sauce

Instructions

Wash fish thoroughly and pat dry. Place fish on a heatproof plate.

Chop spring onions and spread a generous amount of spring onions and grated ginger inside and outside the fish.  

Sprinkle with soy sauce and add just a little water (to keep the fish moist).

Wrap cling wrap around the fish and plate allowing an opening at each end to let the steam out.

Put in 1100 watt microwave oven for about 12 minutes (adjust time to size of fish) and serve.

Note

• If using microwave, make sure the fish is not too large for your microwave oven.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
