Steamed Dungeness crab with crab salt

Steaming preserves the delicate sweetness of Dungeness crab, allowing its natural flavour to shine without heavy sauces or seasonings – just a little butter and a fragrant salt.

Ingredients

  • 1 whole Dungeness crab or mud crab
  • 25 g melted butter, to serve

Crab salt

  • 1 tbsp salt
  • 1 tsp fennel seeds
  • 1 tsp coriander seeds
  • 1 tsp cubeb or black peppercorns

Cress salad

  • 1 cup mixed herbs or cress
  • 2 tsp olive oil
  • 2 tsp lemon juice

Instructions

  1. Dispatch the crab humanely, then place into a large saucepan with about 1 litre of boiling water. Bring to a simmer and simmer, steaming the crab for 12 minutes. 
  2. While the crab is steaming, wrap the crab salt ingredients in foil and enclose into a packet. Toast the packet of spices for about 5 minutes until fragrant, then grind to a coarse salt with a mortar and pestle. 
  3. Toss the cress salad ingredients with a little olive oil and lemon juice, and serve the crab with melted butter and the crab salt.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
