Tamari almonds

Tamari is made like soy sauce (by fermenting soybeans), but without wheat added into the mix. The result is a bolder, stronger version of soy sauce that’s also gluten-free.

Ingredients

  • 4 cups almonds
  • ⅓ cup tamari
  • ⅛ tsp cayenne pepper

Instructions

1. Preheat oven to 180°C (350°F).

2. Put almonds on a tray lined with baking paper. Toast in oven a few minutes to heat up.

3. Pour tamari in a bowl and add cayenne pepper. Stir to combine.

4. Add warmed almonds to bowl and toss to coat.

5. Return coated almonds to baking tray and put back in the oven for 8 - 10 minutes.

6. Remove from oven and let cool.

Cook’s Notes

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
