SBS Dutch radio’s Yvonne Davis shares her quick and easy recipe for apple muffins. The key is to use tart green apples, such as the Granny Smith variety.
- 2 cups grated green apple (from 3 or 4 apples)
- ½ cup brown sugar
- ½ cup oil
- 2 eggs
- 1 tsp vanilla
- 1 cup wholemeal self-raising flour
- 1 cup self raising flour
- ½ tsp baking powder
- 3 tsp cinnamon
- caster sugar
Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
Preheat oven to 200°C. Grease a muffin tray.
Combine the wet ingredients in a bowl. Combine the dry ingredients in another bowl.
Mix the wet ingredients into the dry until well combined.
Pour the mixture into greased tray. Sprinkle with combined caster sugar and cinnamon. Bake for 20–25 minutes.
Cool slightly on a wire rack before serving.
