This classic cocktail is a refreshing mix of rum and ginger beer served over lots of ice. The addition of lime juice gives it extra zing.

  • ice cubes
  • 1 lime, half juiced, half sliced, to serve
  • 60 ml rum
  • 15 ml sugar syrup
  • ginger beer

Cook's notes

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.


  1. Fill a large glass with ice. Add lime juice, rum and sugar syrup. Stir well and strain into a cup filled with ice cubes, until two-thirds full. Top up with ginger beer.
  2. Garnish with lime slices. Serve.
