Everything on toast

For a comforting Australian-style breakfast at home, try Everything on Toast: poached eggs, avocado and bacon, plus a nod to Australian's multicultural history, with a scoop of hummus, sprinkle of paprika, a dollop of tomato chutney and some American-style homemade everything bagel seasoning bring everything together.

Ingredients

  • 150 g bacon
  • Olive oil, for drizzling
  • A dash of vinegar
  • 4 eggs
  • 1 sourdough loaf
  • 1 avocado, to serve
  • hummus, to serve
  • smoked paprika, to serve
  • tomato chutney, to serve

For the everything bagel seasoning (makes extra)

  • 2 tbsp white sesame seeds
  • 2 tsp black sesame seeds
  • 2 tbsp dried onion flakes
  • 2 tbsp dried garlic granules
  • 2 tbsp poppy seeds
  • 1 tsp vegetable stock powder
  • 2 tsp salt

Instructions

  1. To make the everything bagel seasoning, combine the white and black sesame seeds in a small saucepan and swirl over heat until the white sesame seeds are golden. Combine with the remaining ingredients in a medium bowl and mix to combine.
  2. In a medium frying pan, fry the bacon with a little olive oil and set aside. Bring a large saucepan of water to a simmer, add a dash of vinegar and crack in the eggs. Poach the eggs to your liking.
  3. Cut the sourdough into 2 or 4 thick slices (as desired). Drizzle with olive oil and grill the sourdough on both sides in a chargrill pan.
  4. Serve the bacon, eggs and avocado on top of the sourdough, with a scoop of hummus. Scatter the hummus with smoked paprika and the eggs and avocado with the everything bagel seasoning. Serve with tomato chutney on the side.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
