Ingredients
- 220 g butter
- 6 egg whites (220 g)
- 125 g blanched almond meal
- 240 g icing sugar
- 75 g plain flour
- 1 lemon, finely zested
- 30 raspberries (around 250 g)
Instructions
- Preheat the oven to 175°C (or 180°C if your oven runs slightly cooler).
- Melt the butter in a small saucepan until it forms a browned butter (beurre noisette), then remove from the heat and allow to cool.
- Use a pastry brush to grease 10 out of 12 holes in a friand tin with the browned butter, then line the base of each of the greased holes with an oval piece of baking paper.
- Place the egg whites into a large mixing bowl and whisk until just combined – not frothy.
- Into a second large bowl, sieve the almond meal, icing sugar and plain flour. Use a rubber spatula to mix the dry ingredients into the egg whites until completely combined. Add the lemon zest and fold through. Place the bowl onto a set of kitchen scales, then weigh in 185 g of the browned butter, then fold gently to combine. Transfer the friand batter to a large measuring jug.
- Equally divide the friand batter into the greased tin holes, then top each friand with 3 raspberries. Bake for 25 minutes, then remove from the oven. Allow to rest for 5 minutes before turning out onto a cooling rack and serve.
