Korean-style fried crocodile

KFC, but make it crocodile! This innovative dish is the result of putting together suggestions from various guests of Season 8 of The Cook Up with Adam Liaw into a Mad Libs-style recipe.

Ingredients

  • 500 g crocodile meat (see Note)
  • ⅓ cup potato starch
  • ⅓ cup (80 ml) light soy sauce
  • ¼ cup (60 ml) yuzu honey (see Note)
  • 1 chilli, sliced, to garnish
  • 1 tbsp toasted sesame seeds, to garnish
  • Oil, for deep frying

Instructions

  1. Cut the crocodile meat into 2-3cm pieces and add to a large mixing bowl. Add the potato starch and toss gently to coat.
  2. Add the oil to a deep frying pan or pot and heat on medium-high until it reaches 180°C. Shake off excess starch from the crocodile pieces and deep fry for 4-5 minutes, or until golden brown. Drain well.
  3. In a large frying pan over medium heat, add the soy sauce and yuzu honey and heat, stirring, until bubbling. Add the drained crocodile pieces and toss well to coat.
  4. Serve immediately, garnished with sliced chilli and a sprinkle of toasted sesame seeds.

Note:

• You can buy crocodile meat from select butchers or find frozen online.
• Yuzu honey is a jammy syrup that's also called citron tea. You can find it at some major supermarkets or at select grocers.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
