Roasted broccolini with parmesan and lemon

Roasting is a fantastic way to bring out the natural sweetness in brassicas like broccolini. When paired with parmesan cheese, caramelised garlic and flaked almonds, this side dish makes for a real show-stopper!

Ingredients

  • 3 bunches broccolini, trimmed, thick stalks halved
  • 2 tbsp olive oil
  • Salt and black pepper
  • 1 lemon, halved
  • 4 garlic cloves, crushed
  • ½ cup parmesan cheese, grated
  • ¼ cup flaked almonds

Instructions

  1. Preheat the oven to 200˚C. Line a baking dish with baking paper. Drizzle the broccolini with olive oil and toss well to coat. Season with a generous pinch of salt and black pepper.
  2. Add the broccolini and the lemon halves (flesh-side down) to the tray. Roast for 8 minutes.
  3. Remove the tray from the oven and turn the broccolini. Add the garlic and parmesan to the tray and roast for a further 8-10 minutes, or until the cheese melts and the garlic is fragrant.
  4. While the broccolini is roasting, heat a small frying pan over medium-high heat. Add the flaked almonds and cook, tossing occasionally, until toasted and golden. Remove from the heat and allow to cool.
  5. Transfer the roasted broccolini to a large serving dish and squeeze over the charred lemon juice. Sprinkle with the toasted flaked almonds and serve.
