Whipped butter

Take your bread and butter to the next level with this luxurious whipped butter from Adam Liaw. Serve with a sprinkle of fancy salt - think truffle, smoked or citrusy!

Ingredients

  • 1 loaf good-quality sourdough
  • 2 tbsp water, plus extra for spritzing
  • 500 g butter, softened
  • Fancy salt, to serve (e.g. smoked salt)

Allow 10 minutes cooking time if warming the bread.

Instructions

  1. Preheat the oven to 180˚°C. Spritz or sprinkle the sourdough with water and place in the oven for 10 minutes (optional).
  2. Place the butter into a stand mixer with the whisk attachment fitted and whip 1 minute, add 2 tbsp water and whip for a further 3-4 minutes, or until fluffy. Spoon the whipped butter onto a serving plate and scatter with the salt. Serve with the bread on the side.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
