Whipped coffee

This three-ingredient whipped coffee blends ice cubes, coffee and sugar into a thick, smooth mousse in just five minutes. Perfect for those who don't eat eggs or dairy, the food processor does all the work turning a handful of ingredients you probably have in the kitchen already into a speedy dessert!

Ingredients

  • 150 g ice cubes
  • 15 g instant coffee
  • 85 g white sugar
  • 1/3 cup (80 ml) cold water
  • Cocoa powder, for dusting (optional)

Instructions

  1. Place ice, sugar, coffee and water in a food processor, blend until creamy. Add a little more water if required to reach a creamy consistency.
  2. Divide between glasses and dust with cocoa powder (if using).

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
