White asparagus from Tasmania

In Europa ist die Spargelzeit fester Bestandteil der Essenskultur. Der Spargelanbau ist alles andere als einfach und bedarf einer Reihe von Faktoren.

In Tasmania, farmer Richard Weston has set himself the task of providing Australia with the finest white asparagus. For ten years, he has been working with “White Tasmanian Asparagus” to successfully grow the vegetable. In order for this to be successful, it requires not only the climatic conditions and the right soil, but also knowledge. The path to growing asparagus in Australia wasn't an easy one.

It is no coincidence that Tasmania appears to be suitable for cultivation due to the climate and soil conditions. But anyone who has ever seen an asparagus field knows that, in addition to special machinery, the correct cultivation technology is particularly important. This also includes precisely calculated dams, in which the vegetables grow underground and whose temperature must be regulated with special tarps. Harvesting or “Spargelstechen” is painstakingly done by hand, even in Tasmania. The asparagus is pricked with special knives.
