Brown rice pilaf with lentils and onions
Ingredients
1 cup brown rice
½ cup Le Puy lentils
2 onions, finely sliced
2 tbs extra virgin olive oil
2 tsp cinnamon powder
1 lemon
Parsley, chopped for garnish

Greek Mushroom Pilafi Recipe
Method
Add the rice and lentils to a saucepan and add 1 litre of cold water. Bring to boil and then continue to simmer until rice and lentils have softened (about 20 to 30 minutes). Drain and rinse with cold water.
While the rice and lentils are cooking, heat a large frypan and add the olive oil and onions. Add a sprinkle of salt and cook on a medium heat, until caramelised. Make sure to keep stirring during this time so the onions don’t burn. They need to become soft and browned.

When the onions are ready, add the cinnamon and mix through. Add the cooked rice and lentils and mix through the onions. Cook for a further 3 minutes until rice is heated through and all ingredients are well mixed. Season with salt and pepper and remove from heat.
To serve, squeeze some lemon juice over the pilaf and sprinkle with finely chopped parsley.
