Ingredients
Brownie mix
2 eggs at room temperature
1 cup sugar
1 tsp. vanilla extract
½ cup melted unsalted butter -- cooled down
½ cup unsweetened cocoa --sifted
½ cup flour -- sifted
¼ tsp salt
Ice Cream Mix
1 cup vanilla Ice Cream
½ crunchy chocolate
Berries
½ cup Strawberries (sliced)
¼ cup Blueberries (crushed)
5-10 blueberries whole
Garnishing
1tbsp pistachios (crushed)
Method
- Heat oven to 175 degrees C and prep a square brownie pan by spraying oil on the pan then line it with baking papers.
- Mix the sifted flour, cocoa and salt in a bowl.
- Take another bowl combine room temp butter, oil, and sugar.
- Mix well.
- Now add and vanilla extract mix again until the mixture is lighter in colour.
- Now add the flour and cocoa and mix (slowly).
- Pour the batter into the pan and place it in the oven.
- Bake for 25 to 35 minutes, until an inserted toothpick comes out clean.
- Remove from the oven and cool down completely.
- Once the brownies are completely cooled, crumble it and keep it ready to serve.
- Take crushed crunchy chocolate.
- Add this crushed kit kat into vanilla ice cream.
- Mix and set it back in the freezer for approximately half hour.
- Take a glass add the crumbled brownie, then place some strawberries on the edges of the glass.
- Add 3-4 blueberries.
- Place a scoop of ice cream on the berries.
- Pore the crushed berries on top of the ice cream.
- Lastly sprinkle some crushed pistachios and serve.
