Easy healthy snack: Methi Dhebra

An iron and fibre-rich snack made with fenugreek leaves and bajra flour, which can be stored for many days. Try this easy recipe by Noni Sachdeva.

Ingredients

  • 1 ½ cup millet flour (Bajra flour)
  • ½ cup Atta (wheat flour)
  • 1 cup chopped fresh fenugreek leaves (methi leaves)
  • 2-3 green chillies finely chopped
  • 1 tsp coriander powder
  • 1tsp fresh ginger
  • 1tsp fresh garlic
  • 1tsp red chilli powder
  • 1/2tsp sugar
  • 4tbsp oil
  • ¾ tsp turmeric powder
  • ¼ cup yogurt
  • ½ tsp sesame seeds
  • Salt to taste
  • Oil for frying

Method

  • Grind green chilli, ginger and garlic into the grinder.
  • Take a bowl, add bajra flour, atta, fenugreek leaves, coriander powder, chilli – garlic – ginger paste, red chilli, sugar, turmeric powder, sesame seeds, salt, oil and yogurt.
  • Mix everything.
  • Add water slowly and knead into stiff dough.
  • Greece your palms with oil.
  • Pinch a small size portion from the dough and make a small ball.
  • Flatten each ball pressing between palms. Or flatten it by rolling with rolling pin and keep ready for deep frying.
  • Heat oil in a frying pan and add the dhebra dough and cook on both sides till golden brown.
  • When done you can serve with yogurt and chundo (grated mango chutney).
