Cardamom and pistachio kheer (serves 4-6)
Ingredients
- 8 cups full fat milk
- 1/2 cup Basmati rice, (washed and soaked for at least 1 hour)
- 1/2 cup Sugar
- 11/2 teaspoon Cardamom, ground
- 1/3 cup Pistachio nuts, crushed, unsalted
- ¼ cup chopped almonds (soak 4-5 hours, peel off the skin and cut finely)
- 5 -6 stands of saffron
Method
- Take a pot and place it on medium heat.
- Add the milk and bring it to a boil.
- Keep stirring the milk to make sure it does not stick to the bottom.
- Once the milk is boiling, add soaked rice.
- Mix and cook for about 40 mins and keep stirring.
- Once the rice is cooked in the milk, add sugar, cardamom ground, pistachio, almonds and saffron.
- Mix and cook for another 10 to 15 mins, or till you get your desired consistency.
- Once the Kheer is ready, let it cool down completely before serving.
