Some Italians have had their nonnas teaching them all the secrets of good cuisine. Aldo Ortado is one of these lucky ones and decided to make food and Italian cuisine his mission in Australia.
The young Italian chef was part of Masterchef Australia 2018, where he was appreciated, and not only for his recipes, by the judges:
“Aldo, do us a favour. Don’t change. We love you”
Aldo revealed SBS Italian all he knows about home-make gnocchi, which presented us with a sauce that is perfect for this time of the year and a real classic: gorgonzola and walnuts. The tasty Italian "blue cheese", typical of Piedmont and Lombardy areas, mixed with the crunchiness of roasted walnuts make it a dish with a strong and yet delicate taste.
Ingredients for the home-made gnocchi:
- 500 gr potatoes
- 150-170 gr flour
- 1 egg yolk
- salt
For the sauce:
- 150 g sweet gorgonzola
- 250 ml whole milk
- 100 gr roasted walnuts
To accompany the dish, Aldo recommends a light Italian red wine, like a Chianti, but also an Australian Pinot Noir.
