Home-made pasta maker Piera Pagnoni tells her "pornogastric" recipe.


It is a poor dessert typical of the Bolognese countryside, commonly prepared during the Carnival period.

The tagliatelle are made by mixing flour and eggs to make a medium-thick sheet of pastry which we will sprinkle with castor sugar and grated orange peel.  At the end we will fry, drain and serve cold sprinkled with icing sugar.

Fried tagliatelle

Ingredients

  • 200gr flour 00
  • 2 eggs
  • 4 tbs castor sugar
  • Oil to fry (or butter)
  • Icing sugar for dusting

Method

Mix the flour with the eggs as for a common egg pasta. Then roll a sheet of medium thickness and sprinkle it with the caster sugar and the grated orange peel.

Roll up the dough like you do for tagliatelle and cut them about 1 cm wide. Leave them rolled up and fry them in plenty of oil, then drain them on a paper towel.

Arrange them on a serving tray, sprinkle them with icing sugar and serve them cold.

Tips: if you prefer you can use butter for frying, unhealthy but with butter they are a "pornogastric" experience
