Supplì al telefono

Fabio Marcuccilli, chef and owner of the restaurant Core de Roma (The heart of Rome), presents a recipe from Central Italy cuisine: "i supplì al telefono". A sort of arancini with a Roman twist: literary "arancini at the phone" because the stringy mozzarella cheese reminds the telephone wire. Here are the ingredients for 25 pieces: 300 gr rice, 150 gr mozzarella cheese, breadcrumbs, 400 gr vegetable/meat stock, 400 gr tomato sauce, 150 gr parmigiano reggiano cheese, 3 eggs, ½ glass of wine, 3 tablespoons olive oil, 150 gr beef mince, 40 gr butter, vegetable oil and salt.
