The word salami originally was referred to fish preserved with salt. Nowadays salami are of course definitely more meaty. James Califano rediscovered the tradition of salami making after moving to Australia. Salami making was originally an art and a tradition passed down from one generation to the next in Italy, but it is also becoming popular down under among non-Italians.
