It is that time of the year, when many Italo-Australians prepare their home-made salami. We caught up with James Califano to talk about this art.


Winter is about to finish and this is the ideal time to make salami, before temperatures rise too much.

The word salami originally was referred to fish preserved with salt. Nowadays salami are of course definitely more meaty. James Califano rediscovered the tradition of salami making after moving to Australia. Making your own salami is a fun process, James explains, and what you have prepared with your own hands, often with the help of friends, tastes even better.

Salami making was originally an art and a tradition passed down from one generation to the next in Italy, but it is also becoming popular down under among non-Italians.
