Actor, director and film producer Mirko Grillini is also a skilled cook who has recently launched Mirko's Epicurean Creations, a Facebook pagewhere he shares recipes on a weekly basis.


"My recipes are healthy, simple and quick to prepare" says Mirko.

While broad beans are not the most popularly used legume on Italian tables they can be easily found frozen all year round or fresh when in season. Here is his recipe for Penne rigate, smoked salmon and broad beans.

Ingredients for 4/5 people:

400 gr of Penne rigate

250 gr Peeled broad beans (fresh or frozen)

250 gr Smoked salmon cut into strips

300 ml cooking cream

50 gr salted butter

1 tea spoon turmeric

Grated parmesan cheese

Salt and pepper

How to prepare it

Boil the penne in salted water.

Meanwhile boil the broad beans for a minute in salted water and peel.

In a large fry pan add the butter and broad means at medium heat. After a couple minutes add the salmon and leave for one minute. Add the cream, turmeric and add salt and pepper to taste.

Drain the pasta, add to the fry pan and stir. Serve with a generous sprinkle of Parmesan cheese
