Stefano cooks a magnificent wheat cake known as a pastiera Napoletana with Loretta Sartori, one of Australia’s leading pastry chefs. Out on a Mallee wheat farm he has afternoon tea with a pioneering couple and visits a beautiful old Tuscan style church. With some barley, he invents an unusual and easy dish. Instead of rice he cooks the barley and stuffs capsicums with it. Finally in this episode he invents another dish. He bones some quails which he marinates Asian-style before cooking them on a very hot skillet.
