Gold Coast resident Shoji Umemura began selling Miyazaki Prefecture’s specialty, nikumaki onigiri, from his handmade trailer before food truck culture had taken hold in Australia. Leaving behind a stable salaried job at 34, Shoji took a leap of faith, sharing his passion for a dish that no one had seen, heard of, or tasted.
