Police say they have arrested a man who allegedly attacked former Hells Angel Peter Zervas outside his Sydney apartment and bit off part of his nose.

The man who allegedly bit through the nose of former Hells Angels bikie Peter Zervas is in custody.

Mr Zervas was assaulted outside his Leichhardt unit block, in Sydney's inner west, after answering an intercom call on Tuesday.

Police say they caught the suspect near his Hurlstone Park home about 4pm on Thursday.

The 28-year-old is in custody at Burwood police station and is expected to be charged over the assault late on Thursday.

Friends say Mr Zervas had turned his back on his bikie links, including removing club tattoos.

Half his nose was bitten off during the assault, but surgeons have since reattached it.

"When I say `set upon', [the offender] grabbed a hold of the victim with his teeth on the victim's nose, bit down hard and bit the nose off," Leichhardt Inspector Clive Ainley told reporters on Wednesday.

The attack on Mr Zervas that police have labelled "bizarre and severe" came days after his brother's alleged killer, Mahmoud "Mick" Hawi, was granted bail.

Hawi was jailed in 2012 for the murder of Anthony Zervas, who was bashed to death during a bikie brawl at Sydney airport in 2009.

But Hawi's conviction was quashed in May and a re-trial ordered, and the ex-Comanchero boss was granted conditional bail on Monday.
