A man filmed cycling away from the scene of a major fire in central Adelaide is wanted for questioning as police declare the blaze deliberately lit.

The fire last week tore through a three-storey building and brought parts of the central business district to a standstill, causing $3 million in damage and destroying the Wing Chun Martial Arts Academy off Hindley Street.

Police want to speak with a man wearing a high-vis vest captured on CCTV cameras leaving the scene on a mountain bike.

"A male on a bicycle was in the vicinity of where the fire started at the time it started," Superintendent John De Candia said on Tuesday.

"He is only a person of interest, he's not a suspect, and that is why we'd like him to come forward and contact us."

The man is described as about 30 years old and wearing a high-vis vest and a black backpack.

The blaze last Tuesday took half the city's firefighters about two hours to bring under control as several roads were closed while smoke billowed from the building.

Neighbouring businesses and buildings were evacuated including the Hotel Grand Chancellor.

Four people were admitted to hospital for smoke inhalation and another was treated at the scene.

Police believe the fire started in a carport behind the building.
