A man has led officers on a dramatic pursuit around Sydney and across the Harbour Bridge before being arrested outside the city's biggest police station.

The chase followed an alleged stabbing in Kensington about 7.30am on Saturday, and ended three hours later when police fired rounds into the man's BMW in Surry Hills.

Two hours after the man drove away from the scene of the stabbing, where a 33-year-old woman was taken to hospital, police spotted him in a white BMW at Mortdale.

Officers chased the car travelling about 120km/h along the M5, M7 and M2 motorways.

Road spikes were used to burst the man's tyres at the Gore Hill Freeway, but the chase continued.

The car crossed the Harbour Bridge at only 10km/h and continued its slow pace through the city centre, passing hundreds of shocked onlookers.

More than 15 police cars followed the driver, who appeared unruffled during the city pursuit.

"They were driving slow. He had his tyres slashed and he was just on the phone," onlooker Mark Lauzon said. "He was pretty calm."

Police eventually blocked the car outside Surry Hills police station.

Officers later confirmed the shots were two rounds of a chemical agent designed to get the man out of the car.

Superintendent Gavin Dengate told reporters police did not intend to lead the man to the station, but it was a "lottery ticket" chance he ended up there.

He said the chase took so long because of potential risks to the public, police and the man.

No one was injured in the chase.

The 33-year-old woman is in a serious but stable condition.
