Noma comes to Australia to sample bush spices

One of world's most famous restaurants, Noma, is opening as a pop-up eatery in Barangaroo for 10 weeks on Australia Day.

One of the world's best restaurants opens its doors in Sydney on Australia Day for just 10 weeks.

Noma reservations sold out in just four minutes months ago.

People paid $485 plus drinks for 12 courses, with only 5000 diners able share the experience.

The owner Rene Redzepi is keeping his cards very close to his chest about what diners can expect.

But he did reveal some secrets to SBS including the use of native spices.

"That's where we found the most unique flavours and also most fun for us to work with. I mean you don't want to travel to Australia to work with a carrot or a beet or a cabbage leaf. because we do that everyday at home"

And some clues to the menu can be found on his instagram site. Crocodile meat and fat. Red ants or how about some lemon murtle icecream with bush limes.

"Finding a new flavour that you haven't had before that's really a special moment," he said.
