7 times it's cool to smoke

There aren't all that many times when you look good smoking. Here, we've taken out the guesswork of when you can pull off a puff keep your swagger. No need to sneak around with these smoking scenarios, it's better if you do get caught.

1. Duck out for a puff

Here's a smoke that involves leaves, but it's not tobacco (or the other kind of leaf, for that matter). This earthy tea-smoked Turkish duck is beautifully pink and full of herbal smokiness, and it's going to make you look pretty awesome.

2. A (smoking) chip on your shoulder

When the chips are down, it's time to set them alight. This smoky chipotle Byron Bay pork shoulder is marinated overnight then smoked at a very relaxed Byron Bay pace of six hours, until it practically pulls itself into delicious strands.

3. Smoke and sesame

The only thing getting charred here is skin. When the deep-purple skins from these Japanese eggplants become nice and blackened from the grill, they release their rich smokiness into the flesh. This smoky, sweet eggplant just so happens to go perfectly with the nuttiness of sesame and the ocean-hues of bonito and kombu.

4. What's good for the goose

Matthew Evans' goose is cooked - or more correctly, smoked - and we're not at all sorry. Applying apple wood to his goose, Matthew lets the bird smoke away for a very slow 10 hours. The result is a flavourful, rich meat and a pretty good use of your day.

5. Put it on ice

Chill out with a smoke and churn it up with this tea-smoked tomato sorbet. Sweet, tart and smoky all at once, this is a refreshing way to enjoy a smoke and have a clean palate afterwards.

6. Passive smoker

You don't always need to be doing the smoking yourself to enjoy the benefits of a good puff. These smoked trout parathas are little pockets of woody, smoky goodness. Throw them on the barbecue for an extra level of charred deliciousness.

7. A drink and a smoke

It's time to adjourn to the smoking room with a glass of this spiced smoking bishop. This wintry tipple is best enjoyed fireside Ebenezer Scrooge-style, or in slippers and with anchovy sables. Matthew Evans has used cumquats in his, but you can use oranges and lemons.
