Inspired by the much-loved Greek cheese pie, this tasty toastie is fllled with spinach, herbs and three cheeses: feta, mozzarella and cream cheese, plus semi-dried tomato. There's a wee bit more chopping than your usual quick toastie, but the end result is worth it!

This recipe makes slow-cooked, full-of-flavour baked beans from scratch (it's a great way to use up the last of a ham bone) but when you're short on time, use bought canned baked beans to make a filling but quick jaffle meal in minutes. (Or for a twist, try this bacon, baked beans and cheese jaffle recipe that puts the bacon on the outside of the sandwich!)

Discover Italy's mozzarella marvel, with bread sandwiches filled with melty mozzarella and other fillings, then dipped in egg and fried. The variations are endless and delicious. Luca Ciano's recipe has anchovies and prosciutto inside, and he crumbs the sandwiches before frying, while Poalo Bacchia's version (pictured) uses fior di latte instead of mozzarella.

It's kinda fancy, but very fast! Guillaume Brahimi gives the Parisian classic, usually made with ham and cheese, it a boutique re-design using smoked salmon in place of the ham. (The salmon roe is an optional extra - it's delicious without, too!)

If you've got leftover bolognese sauce, try Adam Liaw's twist, which fills the pan-fried toastie with bolognese sauce and mozzarella, then gilds the greatness by creating golden grilled cheese crunchiness on the outsides (parmesan on one side and mozzarella on the other).
