Dear watermelon, let's take things further

Juicy, messy, fabulous wedges of watermelon will always reign supreme. We're flexing our creativity this week with recipes that take the beloved summer fruit further.

A fruitier tipple one could not conceive! In this soju-laced punch, a hollowed-out watermelon forms the vessel for a melon, ginger and nashi pear concoction. We suppose you could say it's refreshing as punch.

Rest assured, your eyes do not deceive you. This Filipino soup from the Pampanga region sees watermelon swamped in a tamarind-based broth with snake beans, tomato and beef brisket – what a trip, right? If anything, watermelon sour soup (or sinegang sa pakwan) is just the sort of little-known dish that'll take your tastebuds to new places.

Fruit, granita and sorbet are as solid a trio as Crosby, Stills and Nash. Sydney's Dan Hong shares his very chef-y and carnival-coloured lychee granita, strawberry sorbet and compressed melon.

It's not obvious at first glance, but among those halved cherry tomatoes hide perfect balls of watermelon, coupled with kalamata olives and balsamic. Our girl Tama Carey, who authored the recipe, knows when she's onto a good thing.

They're called paletas de agua, or water popsicles, and Mexicans can be seen with one in hand on sweltering summer days. They can be made with any seasonal fruit, but these ones see watermelon mingle with strawberry and lime. Via Feast

Chargrilled watermelon with feta and mint is one of Adam Liaw's creations. Grilling watermelon changes its texture and caramelises its sugars, resulting in a sweet yet savoury delight. Crumbly feta rounds it off with a welcome hit of salty.

This wonderfully off-beat Asian-inspired dessert stars cubed watermelon in rosewater sauce, topped with a scoop of peanut ice-cream. It's a pudding of sorts and we're gooey for it. Via The Real Food of China

How about a super-simple take on the cool joy of watermelon? Sarah Graham's watermelon ice-blocks are simply frozen wedges, drizzled with a dark chocolate syrup and scattered with nuts.
