If you love the full, traditional festive spread, with a ham as the centrepiece, then take a look at Mark Moriarty's recipe for a festive ham with a brown sugar and soy, topped with colourful chopped glacé cherries, orange zest and thyme. It's served with a whole roast swede, glazed carrots and braised red cabbage with apple, onion and spices.

This festive recipe from Adam Liaw puts a spin on the idea of a 'turducken' (a chicken stuffed into a duck, stuffed into a turkey, a dish that gained popularity in the US in the 1970s). The three meats are processed with brandy and spices and baked as a terrine. A cherry vinaigrette adds a bright and fruity balance.

These pretty piped chocolate trees make a fun addition to a festive spread, or can be wrapped and given as gifts. Kirsten Tibballs also suggests you could add a string before piping, and use as Christmas tree decorations, once they have set.
