Make it with marmalade: 15 great sweet and savoury recipes

From marmalade melting moments to glazed ham, here are some great ideas for harnessing the citrus wow factor of marmalade (plus some recipes for making your own sticky spread!).

If you love the sweet but tangy joy of marmalade, these recipes are for you. From a quick pork stir-fry to sweet biscuits and puddings, these recipes get extra flavour from the addition of some of the tangy citrus spread.

Orange marmalade tartlets

These little tarts from Rachel Khoo can be enjoyed for afternoon tea or dessert. The homemade chunky marmalade is what gives them their fantastic flavour, layered between sheets of puff pastry. The pastry bases can be made ahead of time, and the tarts topped with cream and cooked orange slices just before serving.

Spicy and sticky marmalade pork

"Marmalade is such a great ingredient: it really boosts this most simple of dishes with its tangy, deep, sweet and citrus flavour," says Donal Skehan of this quick and easy stir-fry recipe.

Lady Marmalade melting moments

"You know that version of the song ‘Lady Marmalade’, where Christina Aguilera pumps out that EPIC note as she begins her verse? What a MOMENT, right!? That’s what these melting moments remind me of. The slightly bitter tang of the marmalade in the buttercream is enough to splice through the richness of the biscuit and filling, and as it melts on your tongue, you’ll find yourself having a moment, too," says Alice Zaslavsky of her twist on a much-loved biscuit.

Sticky clove bourbon ham

The bourbon, honey and marmalade glaze adds great flavour to this recipe. While glazed ham is a Christmas favourite, it's a great dish to cook at any time, so there's no need to wait for the festive season. It tastes just as good cold for lunch and is ideal for a picnic or a big party.

Osborne pudding

Orange marmalade is the star ingredient in Osborne pudding, a traditional English bread-and-butter pudding. While the classic version often uses brown bread, Adam Liaw's take on this comforting custardy dessert uses brioche, and adds a marmalade and Grand Marnier glaze on top. Popped under the grill, it develops a deliciously caramelised note.

Finger lime marmalade syrup cake

If you come across fingers limes, make marmalade with the zingy Australian citrus and use it in this deliciously sticky, syrupy cake from Mindy Woods.

Fig and pear compote with marmalade

Marmalade, white wine, star anise and cardamon add delicious depths of flavour to the dried fruit mix used here, including dried apricots, peaks, figs and raisins.

Marmalade crumble bars (and friends)

Marmalade-filled crumble bars are one of three baked treats you can make using the same basic cookie dough in this recipe from Anna Olson. Along with jam-filled apricot lemon rugelach and raspberry linzer cookies (the ones shown with a star shape are great for Christmas baking, but you can vary the shape of the cut-out to make Easter, Valentine's Day and other special biscuits), the dough can be used to make layered crumble bars. The dough is used for both the base (which is spread with a layer of marmalade) and the crumble layer on top, creating deliciously citrussy pieces.

Summer fruit pudding

Summer pudding is a bread and berry pudding that originates from the United Kingdom. In this version, Adam Liaw uses Australian fresh seasonal stone fruits (and a few tablespoons of marmalade) for a fresh and pretty dessert.

Jamie’s panettone pudding tart

Save this idea from Jamie Oliver for festive times when panettone is plentiful. This version of the classic bread and butter pud is super-fun – ripping up a panettone, layering it with chocolate, marmalade and custard, then baking it until golden and gorgeous in a tart tin. "It’s a total showstopper, unexpected, and from a flavour and comfort perspective I’m sure there won’t be much conversation happening round the table when you bring this bad boy out," he says.

Gateau de Savoie

In this recipe from Guillaume Brahimi, a butter, marmalade and Grand Marnier glaze is used to finish this traditional French cake renowned for being as light as a feather. Serve as is or with cream and berries on the side.

Turkey with cumquat and pistachio stuffing

Maggie Beer's recipe features a rosemary, pistachio and cumquat stuffing, and a marmalade glaze.

Air fryer barabrith

If you have an airfryer, add this to your recipe list. Marmalade adds extra flavour to this popular Welsh cake, where the fruit is soaked overnight in tea.

Cumquat-scented trifle

This trifle by Matthew Evans is layered like a tiramisu, with a cumquat marmalade-scented ricotta replacing the cream component. Seville marmalade would also work well here.

Traditional rich fruitcake

Looking to use up the last bit of marmalade in a jar? This traditional fruitcake uses a tablespoon of marmalade to add to the rich flavours of rum-soaked fruit, lemon rind and mixed spices. It's perfect for Christmas or anytime you want a richly rewarding fruit cake.
