Penne with zucchini crema
"This is a much-loved pasta dish in my repertoire. The zucchini are cooked until very soft and creamy, making this super light yet very moreish. It’s easy to whip for a weeknight dinner, particularly if you’re looking for a champion vegetarian meal that everyone will love," Schofield says.

Fragrant fish curry
This simple but delicious curry is ready in about half an hour, making it ideal for weeknight dinners.

Broccoli, pea and cheddar tart
This lovely tart can be served warm or cold, and if you don't have broccoli, you can spinach or more peas instead. If you have the time, you can make Schofield's shortcrust pastry to use, but the tart can easily be made with purchased frozen shortcrust, too.

Upside-down grape semolina cake
When grapes mix with caramelised sugar syrup, it creates a wonderful jammy flavour on the top of this moist afternoon tea cake.

Cream cheese and chocolate brownie
Brownie mixture is a great canvas for playing with flavours, and this fudgy version has cream cheese, coffee and chopped almonds.

Lemon and lime curd
This recipe is a celebration of citrus, and there are so many ways to use it – in crepes or tarts, to fill profiteroles, and of course, on your morning toast, or thick slices of fresh bread!
