From Champotón to Yucatan to the stunning Celestún coast, Pati Jinich is back in her home country, meeting with chefs and experiencing all the local delights. In the latest installment of the popular series, Jinich serves up plenty of inspiration for home cooks looking to broaden their Mexican food knowledge beyond tried and true fast food favourites; in true Pati style it's a bit of the old mixed with a bit of the new. Here's what not to miss!
Crema de coco
Made with sweetened coconut milk and cinnamon, these creamy coconut custards are best served warm, topped with toasted coconut flakes.

Pork and beans (frijol con puerco)
Big in volume and flavour, this is a generous meal to fill the masses. Each person can “puuch” or mash and mix their own garnishes in their bowl, then mop it all up with warm corn tortillas.

Basic Yucatecan tomato sauce
Most cuisine's lay claim to their own tomato sauce, which forms the base of many recipes. This Yucatecan one features whole habanero, coriander and white onion - it's great on eggs or seafood.

Everything but the kitchen sink rice (arroz con mariscos)
Packed full of warm, earthy flavours, arroz con mariscos sits somewhere between a soup and a risotto. It's a celebration of abundance and great for feeding a crowd.

Coconut shrimp (camarones al coco)
Coconut shrimp is always a crowd pleaser, but few know where it hails from. It's found in the Yucatán peninsula, from the shores of Campeche to the beautiful beaches of the Caribbean. Hot tip: be sure not to overcrowd the pan when frying so that your shrimp can crisp up nicely!

Mango habanero hot sauce
Everyone has their favourite go-to hot sauce, and we're pretty confident this one is a hot contender.The sweetness of the mango quickly dissolves into an assault on the tongue by the habanero.

To-die-for ceviche
This Mexican-style ceviche delivers on its name. There's crunch from the celery, creaminess from the avocado and sweetness via mango. Serve with plenty of tortilla chips on the side.
