It’s one of our favourite events of the foodie calendar. This year, Food Network is a supporting partner of the festival, which descends on Centennial Parklands from March 9-12. In 2017, Taste of Sydney are introducing some new twists, like foodie ‘precincts’ that shine the light on burgeoning dining hotspots around town including Paddington, home to recent additions The Four in Hand by Guillaume, Saint Peter and the Latin American Tequila Mockingbird; and Barangaroo. Here are a some of the highlights from the action-packed weekend.
Meat and Livestock Australia presents Cooks Corner in association with the Food Network
Catch Food Network’s very own Andy Allen and Ben Milbourne (Andy and Ben Eat Australia) and Hayden Quinn (Surfing the Menu) as they host a series of meat mastery demos. Hear firsthand about sustainably raising cattle and sheep and pairing wine with meat, while taking home new butchery and cooking hacks. And, do it all with a canapé and glass of wine in hand.

Saint Peter
Josh Niland is doing some seriously inventive things with seafood at his Paddington restaurant, Saint Peter. The fish whisperer honed his skills at cult seafood eatery Fish Face and is using them on a sustainable menu that rotates daily (yes, daily!), putting seafood ‘offal’ on the map.
Saint Peter's Taste of Sydney Menu:
Sweet & Sour Mooloolaba Albacore & Yellow Witlof $6
Shredded Petuna Ocean Trout $10
w/ Sourdough crisps
Salt & Native Pepper Clarence River School Prawns $12
ICON DISH: Pambula Sea Urchin Crumpet $24
Mercado
Nathan Sasi’s (Nomad) Spanish-leaning Mercado will also feature at Taste, with Sasi cooking up signature dishes from his menu, covering off butchering, meat curing and bread-making. Mercado practices whole animal butchery and works with small farmers and growers, plating up dishes that revive Spain's Moorish history with a new world twist.
Mercado's Taste of Sydney menu:
Spiced cauliflower $6
w/ pinenuts, pomegranate & sheep's milk labne
Hazelnut mousse cake $10
w/ Pedro Ximenez & gold leaf
Fole Gras Parfait $12
ICON DISH: Spit roasted 'Berkshire' porchetta $18
w/ rare breed black Berkshire pork belly - apple, herbs & quince aioli

Banksii Vermouth Bar & Bistro
Hamish Ingham and Rebecca Lines’ (Bar H, Surry Hills ) restaurant and vermouth bar was named after botanist Sir Joseph Banks, and with good reason: it’s entirely botanicals-led, meaning you’ll taste plant roots and flowers right throughout the menu. It's a fitting setting for their garden-themed food and drinks, and marks the first Vermouth bar offering for the festival.
Banksii's Taste of Sydney Menu:
Ora king salmon rillette w/ red pepper relish, rosemary flat bread $10
Banksii duck sausage w/ vermouth plum jam & fennel salad $12
Lavender and rose soft serve w/ red vermouth caramel & pistachio praline $6
ICON DISH: Local radishes and blush turnips, seaweed butter & succulents $18

Long Chim
David Thompson’s return to Sydney’s dining scene was kind of a big deal last year. The Sydney chef spent the last decade between London and Bangkok, returning to his home town to open fiery Thai restaurant, Long Chim. His Taste menu will also feature a Thai inspired cocktail journey designed to complement his red-hot food. Don’t worry, it’s been toned down a notch for the festival.
Long Chim's Taste of Sydney menu:
Cured pork sausage $10
w/ Ginger chillies
Grilled squid $10
w/ Sriracha sauce
Black sticky rice coconut slice $6
ICON DISH: Charred rice noodles, chicken yellow beans & Chinese broccoli $14
