Chocolate avocado pudding

For a healthy dessert that's rich, creamy and feels a little naughty, grab yourself an avocado and cacao powder. To give it a very Aussie twist, this recipe adds crushed Tim Tams as a garnish.

Ingredients

  • 2 avocados
  • 2 tbsp honey
  • ¼ cup cacao powder
  • ½ cup almond milk
  • 2 Tim Tams, crushed
  • 4 strawberries

Instructions

  1. Combine avocado flesh, honey, cacao powder and almond milk in a blender. Process to form a puree.
  2. Spoon puree into serving glasses. Top with crushed Tim Tam. Garnish with a strawberry. Serve.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
