1. Mandarin hazelnut cake with cream cheese frosting and sugared mandarin peel
The great thing about this recipe is you use whole mandarins, yes skin, pith and all. The result is a wonderfully moist and moreish cake.

Pepper in meringue may sound odd, but the little spicy kick works really well with the acidity of the grapefruit curd. This will be one rewarding dessert to make.

5. Blood orange custard with blood orange granita
Granita is a handy thing to have in your freezer – add a few large spoonfuls to a glass of prosecco for a refreshing spring drink.
