Fava is a healthy, delicious, low calorie dip. It has few ingredients, it's simple to make, and can be eaten warm. Angela Nicolettou gives the recipe and unveils the secrets to a delicious dip.


Fava Dip

Ingredients

2 cups yellow split peas

1 medium onion, diced

¼ cup extra virgin olive oil

Diced red onion and chopped parsley to serve

 Method

In a large saucepan add the yellow split peas with 2 litres cold water and simmer. Skim off any froth during this time. Add the onion and olive oil and continue to cook until the peas are very soft and begin to thicken. Season to taste.

Puree using a stick blender or mix vigorously with a wooden spoon.

Serve warm or at room temperature with a sprinkle of diced red onion and chopped parsley and a drizzle of extra virgin olive oil.
