Ram Navami Special: Cardamom and Pistachio Kheer

The holy festival of Ram Navami is celebrated across India. It is a festival that celebrates the birthday of Lord Rama and falls on the ninth day of Navratri. This Ram Navmi, try easy to make Cardamom and Pistachio Kheer.

Cardamom and pistachio kheer (serves 4-6)

Ingredients

  • 8 cups full fat milk
  • 1/2 cup Basmati rice, (washed and soaked for at least 1 hour)
  • 1/2 cup Sugar
  • 11/2 teaspoon Cardamom, ground
  • 1/3 cup Pistachio nuts, crushed, unsalted
  • ¼ cup chopped almonds (soak 4-5 hours, peel off the skin and cut finely)
  • 5 -6 stands of saffron  
Method

  • Take a pot and place it on medium heat.
  • Add the milk and bring it to a boil.
  • Keep stirring the milk to make sure it does not stick to the bottom.
  • Once the milk is boiling, add soaked rice.
  • Mix and cook for about 40 mins and keep stirring.
  • Once the rice is cooked in the milk, add sugar, cardamom ground, pistachio, almonds and saffron.
  • Mix and cook for another 10 to 15 mins, or till you get your desired consistency.
  • Once the Kheer is ready, let it cool down completely before serving.
