Perfect for Australian winter parties: Hara bhara kebab

A healthy & delicious Indian vegetarian snack made with spinach, fenugreek, mint, potatoes and green peas.

Hara Bhara Kebab

Ingredients

  • 1-cup spinach leaves (blanched)
  • 1-cup fresh fenugreek leaves (blanched)
  • ¼ cup fresh mint leaves (finely chopped)
  • ½ cup finely chopped green capsicums
  • ½ cup grated paneer
  • ¼ cup fresh coriander (finely chopped)
  • 1 cup green peas (crushed)
  • 1 tbsp ginger (finely chopped)
  • 1 tbsp green chillies (finely chopped)
  • 1 tbsp cumin powder
  • ¼ tsp turmeric powder
  • 3 tbsp cornflour
  • 3 tbsp breadcrumbs
  • 2 tbsp sugar
  • Salt to taste
  • ½ cup boiled and mashed potato
  • Oil for frying

Method

In a pan add 1-2 tbsp of oil.

Add capsicum and cook for 2-3 mins.

Add turmeric powder and cook for another min.

Add spinach, fenugreek, mint, coriander, ginger, green chilli, peas, cumin powder, salt and sugar and cook till the mixture goes dry.

Turn off the heat and let the mixture completely cool.

Transfer this mixture into a mixing bowl after its cooled; add paneer, cornflour, breadcrumbs and mashed boiled potato.

Mix everything into dough like consistency.

Make small tikkies from the dough and deep-fry the tikkies till golden brown.

Serve hot with tomato sauce and green coriander chutney.
