Ingredients for gnocchi
1 kg of boiled potatoes
200 grams of corn or rice flour
25 grams of hemp seeds
a pinch of baking soda
Ingredients for pesto
200 grams of basil leaves
100 grams of black cabbage
a clove of garlic
100 grams of hemp oil
1 tablespoon of lemon juice
1 tablespoon of hemp protein (powder)
salt and pepper
ice cubes
Process for the preparation of gnocchi
Boil the potatoes and peel them when they are cooked. Crush them with a potato mash when they are still hot and when they are cold add the flour, 25 grams of hemp seeds and the baking soda. Mix everything and form small rolls with the mixture, which will then be cut into small pieces of one or two centimeters. Put the gnocchi to cook in boiling water and, unlike the traditional ones, when they come to the surface wait for another 2/3 minutes before removing them because the rice or corn flour requires a slightly longer cooking time.
Pesto preparation procedure
All the ingredients for the pesto are put together in a blender and chopped. The pesto must be added cold to the steaming gnocchi.
