Mirko's Vellutata of Borlotti beans

With Winter and cold weather fast approaching, a warm delicious soup is what is required. Actor, director, film producer and chef Mirko Grillini has the perfect recipe for you: Vellutata of Borlotti beans.


Ingredients for up to six people

500 gr Borlotti Beans (fresh or dried)

1/2 Red onion

Rosemary (a small cutting)

1 Vegetable stock cube

2 Cloves of garlic

1/2 Teaspoon of turmeric

2 Spoons of extra virgin oil

Salt and pepper

2 Litres of hot water

1 Small chili (optional)

Parmesan cheese (optional)

 

Preparation

Soak the dried Borlotti beans in fresh water for 24 to 30 hours before cooking. No need to do so if using fresh Borlotti.

Chop onion, garlic, chili (optional), rosemary leaves, vegetable stock cube and brown in a large pot. Add Borlotti beans, mix well and let simmer for a couple of minutes. Sprinkle in turmeric, pepper, add hot water and let it simmer until beans are soft. Check for salt and add if required.

Remove a third of the beans and purée the rest with a blender.

Add beans to purée and serve hot with a sprinkle of olive oil, Parmesan cheese (optional) and two slices of toasted bread.
