Pasta with broccoli, Italian sausage and pecorino cheese

One of Roma's favourite primi piatti, as presented by head chef at Sonny's Bottega restaurant in Melbourne, Raffaele De Falco.


Pasta with broccoli, Italian sausage and pecorino cheese

Ingredients

  • 300gr of Italian sausage, without spices
  • 300gr of broccoli
  • 300gr half-pasta pasta
  • Grated pecorino
  • Garlic
  • Onion
  • Rosemary

Method

Put a drizzle of oil, garlic and onion in a pan. Then add the coarsely broken Italian sausage with your hands. Brown.


In the meantime, boil the water to cook the broccoli and add a pinch of salt. Cut the broccoli and dip until they are well cooked (they must be opened when they come out of the padella). Add the broccoli to the sausage and brown for 5 minutes.


In the same water in which we boiled the broccoli, cook the pasta. When it is cooked, pour it into the pan and mix.
Remove from the heat and add the grated pecorino. Let it rest. Choose a white wine to match.
