Michael Iaconis, baker and owner of Bakery n.4 at the Preston Market, has celebrated 40 years of honored career.

"In the trade of bread, as for all professions that are considered Arts, one always learns and never teaches", says Michael Iaconis to SBS Italian.

Baker and owner of Bakery n.4 at Preston Market (Melbourne), Iaconis has celebrated 40 years of honored career in 2019.

Arrived in Australia from Calabria in 1979, Iaconis started working with his brother in a bakery and since then he has never stopped: he opened 3 shops and today he sells his ciabatta, pane di casa, and Vienna in one of the Melbourne's most popular markets.

Iaconis "has bread in his DNA" and its secret is to use a few ingredients and flours produced by stone mills.
