For a small company, moving from a pop-up business model to a permanent model can be a challenge.
The company started selling ice cream on a little cart, brought directly from Sicily, at the Queen Victoria Market; but soon Di Fiore realises that the business of private events offers more opportunities.
From one cart, Bianco Latte gets to have a 'machine park' of 14 vehicles to cater its ice cream at receptions, parties and events.
To differentiate the offer, and counter the seasonality that is typical of the ice-cream industry, Bianco Latte also offers 'business activations' for several major companies. On the occasion of a private marketing campaign, the client requested Andrea to produce ice creams using insects.

This is how the ant, the grasshopper and the cockroach ice-creams were born, following the latest trend in the Australian food sector.
The last chapter in the business history of Bianco Latte consisted in the opening of an ice cream shop in Elwood, a little village just outside Melbourne.
