Chef Raj fuels the Lifeline Express

Meet Chef Raj - one of our favourite characters from the Lifeline Express hospital train. His okra fry recipe has been feeding doctors and patients onboard the hospital on wheels for 27 years.

CHEF RAJ'S OKRA FRY OR "BHINDI FRY"

Serves: 4 people


Ingredients:
Salt to taste
100g Onion
1tsp Turmeric
1 tsp Chilli powder
1 tsp Mango powder
1 tsp Coriander powder
1tsp Garlic paste
1tsp Ginger paste
Ketchup to taste
Half kilo of Okra


Method: 
Wash okra and leave to dry for a few minutes.
Chop okra into small 2cm pieces.
Lightly fry okra in any oil.
Now create masala paste: heat oil in wok and add onion, ginger, garlic paste, turmeric powder and chilli powder, coriander powder, mango powder.
Now add okra into the paste in the wok.
Sautée for a few minutes until soft or tender.
Add a dollop of Maggie sauce - ketchup and stir.
And serve.
