Mahshi filfil (Egyptian stuffed capsicum)
As Masterchef alumni Amina Elshafei shares, roots of stuffed vegetables apparently come from the Ottomans who historically ruled parts of the Middle East over centuries. This is her grandmother’s recipe, and you can easily swap out the capsicums with baby eggplant and zucchini.

The smoky sizzled flavour of these kebabs, paired with this sweet and savoury mango sauce, makes them a delicious vegetarian main.
