Made from a rich, creamy blend of goat’s milk and sugar, and with some crunch from pecans or almonds, these traditional Mexican sweets are officially known as Glorias de Linares – named for their birthplace, the small city of Linares in Nuevo León, where the woman who first crafted them reputedly claimed that they tasted like ‘glory’. Recognisable by their vibrant red cellophane wrappers, they’re often given as sweet tokens of love at celebrations such as baptisms, first communions and family or friend reunions, and they evoke great nostalgia for many older Mexicans, explains Rosa Cienfuegos, who shares this recipe in her book La Mesa Mexicana.

What’s not to love, it caramelised, it’s nutty, it’s chocolate-y!" says Irish-Canadian baker Jessica McGovern of this brittle bark, a layer of brittle studded with cashew, pistachio and almond and topped with a layer of chocolate.
